I looked in my fridge Monday and thought I could go shopping. I wrote my list and then decided to make do. I just didn't want to deal with the store for just a couple of things. Especially knowing I have the essentials for many fine meals. I don't have cheddar but I do have feta, goat and mozzarella cheeses. Same with rice I'm out of basmati and still have plenty sushi, brown and sweet rice. It's refreshing to think in terms of what I have rather than what is lacking. I am pledging to make delicious, creative meals all week from the ingredients I have in stock. I know this will help reduce waste and encourage me to try new recipes. New recipes tried already: Hungarian mushroom soup and a new bread recipe, both were wonderful. I love trying new recipes, it helps build a bigger repertoire so I don't get stuck in a rut. I am grateful for the abundance in my pantry :-)
